This shift reflects broader changes in lifestyle, income, and food accessibility.
Urbanization plays a central role in this transformation. Studies on urban middle-class consumers reveal that since India’s economic liberalization in the early 1990s, food consumption patterns have changed drastically, characterized by increased consumption of sugars, fats, oils, and ultra-processed foods. The establishment of large-scale food processing industries and constant influx of imported food products has contributed to tremendous increases in both demand and consumption of processed and ready-to-eat foods.
Traditional foods are losing ground to convenience-driven alternatives. Where homemade wheat or millet porridge once served as breakfast, packaged cereals now dominate. Traditional drinks like shikanji and sharbat have been replaced by sodas and juices. Even staple flatbreads are giving way to pizzas and pies in many urban households. Reports indicate that an average Indian household now derives more calories from processed foods than from fruits.
The role of urbanization and westernization
India’s urban population is growing at an unprecedented rate. Analysis of urbanization patterns indicates that much of this transition will concentrate in medium- and small-sized cities with less than one million residents-the fastest-growing urban areas in the country. These emerging urban centers are particularly susceptible to dietary shifts as residents adopt new food habits while moving away from traditional diets.
Urban diets tend to feature higher consumption of animal-based products, refined fats, edible oils, refined sugar, and processed foods compared to rural diets. Studies show that urbanizing countries are rapidly converging toward these Western-style dietary patterns, which are associated with increased health risks including obesity, hypertension, and non-communicable diseases such as diabetes, heart disease, and stroke.

India declared 2018 as the National Year of Millets and introduced them in the Poshan Abhiyaan nutrition program to address malnutrition and micronutrient deficiency. The country is the world’s largest producer and exporter of millets, contributing about 41% of global production. Government initiatives include including millets in the Public Distribution System, setting up millet parks, and promoting millet-based products in school meal programs.

Price support mechanisms for millets and pulses encourage farmer cultivation while keeping these foods affordable. Minimum support prices for millet crops have increased by approximately 22-25% over recent years. Research institutions like ICRISAT are working to develop higher-yielding, climate-resilient pulse varieties to support India’s self-reliance in these essential crops.
Nutrition education and awareness
Creating awareness about balanced diets and the importance of protein is essential. Experts recommend communication campaigns through community health workers who counsel mothers on nutrition, along with demonstrations on how to enrich food with macro and micronutrients during Village Health and Nutrition Days.
Women’s education has been identified as a significant factor in improving household nutrition. Educated women are better equipped to make informed food choices and prioritize nutrition for their families. Investing in female education and empowerment thus serves as a strategy for improving overall household nutrition.
Individual dietary choices
At the individual level, simple changes can make significant differences. Including a protein source in every meal-whether lentils, paneer, curd, eggs, or legumes-helps maintain steady energy and prevents overeating. Replacing processed snacks with options like roasted chana, boiled eggs, or nuts provides sustained nourishment. Starting the day with a protein-rich breakfast helps stabilize blood sugar levels throughout the day.
Reducing refined carbohydrate intake while increasing consumption of whole grains, millets, and fiber-rich foods helps manage weight and metabolic health. Traditional Indian meal structures that combine cereals with pulses, vegetables, and dairy products offer naturally balanced nutrition when portion sizes are appropriate.
